Orders should be placed ten (10) working days prior to the event. A final guaranteed headcount, or changes, must be made no later than five (5) working days prior to the event. You may not decrease your guest count after placing your final order. In the event the organization needs to increase their guaranteed number after the deadline, Food Service will try to accommodate the increase, however, this may result in menu substitution when necessary. A 20 percent surcharge may be added to late increases to offset additional staffing, and purchasing costs.
